It’s super simple to whip up a batch of these tasty granola cookies. Enjoy them with a cup of tea or take them on the go!
Black Tea Granola Cookies
Ingredients
- 1/4 cup vegan unsalted butter, softened
- 1/3 cup brown sugar
- 1/4 cup pecan butter
- 1 flaxseed egg (1 tbsp flaxseed and 3 tbsp water)
- 1 tbsp water
- 1/2 tsp vanilla extract
- 3/4 cup all purpose flour
- 1 1/2 tsp ground Midnight Rose black tea
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/8 tsp salt
- 1 1/2 cup rolled oats
- 1/2 cup raisins
- 1/2 cup pecans, chopped
- 1/2 cup chocolate chips
Instructions
- Mix the flour, oats, tea, baking soda, cinnamon and salt, set aside.
- In a large bowl, cream butter, brown sugar, pecan butter, flaxseed egg, water and vanilla.
- Incorporate the flour mixture into this. Stir in the raisins, pecans and chocolate chips.
- Shape the cookies using a cookie cutter and place on a baking sheet.
- Bake at 350F for 12 minutes or until golden brown.
- Let them cool completely. If desired, decorate the cookies with melted chocolate and dry rose petals from Midnight Rose tea.
